How We Cook
Our food is homemade, slow cooked, healthy and gluten-free. Our recipes and inspirations come from family, friends, and travels.
For example, SMOTHERED CHICKEN came to be after my friend Stephanie recommended the restaurant “Amy Ruth’s in Harlem New York. The fried chicken with gravy there was delicious, but I knew that I could make something just as tasty and much healthier. Our version is skinless and baked. The chicken is tenderized in a wonderfully tangy marinade, followed by a perfectly spiced and crunchy gluten-free coating. Then we make chicken-mushroom gravy to “smother” it.
We’re happy to share one of our signature recipes with you here, as demonstrated at the 2008 Royal Winter Fair.
